SOPA DE CHAMPIÑONES
Ingredientes:

  • 3 patatas medianas (aproximadamente 600 g)
  • 300 g de champiñones
  • 1 cebolla
  • 150 g o 10 quesitos cremosos
  • perejil
  • sal
  • pimienta
  • aceite
    • Elaboración:

    Pelar las patatas y cortarlas en rodajas de 1 cm de ancho.
    En una cacerola llevar a ebullición un litro de agua. Poner las patatas, sazonar con sal y dejar hervir 20 minutos.
    Cortar los champiñones lavados en láminas.
    Picar la cebolla.
    En una sartén con aceite sofreír unos minutos la cebolla.
    Anadir los champiñones y freír durante 20-25 minutos.
    Cuando le falten cinco minutos, sazonar con sal y pimienta, espolvorear con el perejil y dejar freír el tiempo restante.
    En la cacerola con las patatas listas, sin cerrar el fuego, añadir los quesitos troceados y mezclar hasta que se derritan.
    Quitar la cacerola del fuego y batir con una batidora hasta obtener una sopa homogénea.
    Poner en el fuego de nuevo, añadir los champiñones y dejar que empiece a hervir sin dejar de remover (para que no se queme).
    Una vez llegado al punto de ebullición, retirar la sopa del fuego.
    Poner en los platos. Servir.
