BROCHETAS DE VERDURAS
Ingredientes:

  • 1 pimiento rojo grande
  • 16 tomates cherry
  • 2 calabacines
  • 16 cebolletas
  • 16 champiñones
  • 2 cucharaditas de aceite de oliva
    • Para la salsa:
  • 2 cabezas de cebollín o media cebolla para ensaladas
  • 3 cucharadas de perejil
  • 100 ml de aceite
  • 25 ml de vinagre
  • sal
  • pimienta

    Las cantidades de estos ingredientes están calculadas para 16 brochetas.
    Elaboración:

    Cortar los calabacines en trozos gruesos.
    Cortar el pimiento en láminas anchas.
    Preparar los champiñones, los tomates y pelar las cebollas.
    En una sartén con el aceite freír los champiñones por todos los lados durante 15-20 minutos.
    Colocar los champiñones y las otras verduras en una barita de brocheta de madera.
    Poner las brochetas en una bandeja y hornear a 180 grados durante 50-60 minutos.
    Preparar la salsa. Para esto picar la cebolla y mezclarla en un recipiente para batir con el perejil, aceite y vinagre. Sazonar al gusto.
    Batir unos minutos hasta obtener una salsa homogénea.
    Servir las brochetas listas individualmente y rociarlas con la salsa.
