BIZCOCHO DE CALABAZA Y PLÁTANO
Ingredientes:

  • 1 plátano grande maduro
  • 270 g de calabaza
  • 50 ml de aceite
  • 1 huevo
  • 2 claras de huevo
  • 150 g de azúcar
  • 1 cucharadita de azúcar avainillado
  • 320 g de harina
  • 1 cucharadita de levadura en polvo
  • 1/2 cucharadita de bicarbonato
  • 1/4 de cucharadita de sal
  • 50-70 g de nueces

    Cortar la calabaza en dados, poner en agua hirviendo y cocer durante 20 minutos. Escurrirla y desmenuzarla con la ayuda de una batidora hasta obtener un puré.
    Machacar el plátano con la ayuda de un tenedor.
    Añadir el huevo, las claras, el puré de calabaza, el aceite, el azúcar y el azúcar avainillado. Mezclar hasta conseguir una mezcla homogénea.
    Tamizar la harina junto con la sal, el bicarbonato y la levadura. Añadir a la mezcla y amasar bien.
    Cortar las nueces y añadir a la masa, mezclar.
    Poner la masa en un molde untado con aceite y hornear a 190 grados durante 45-50 minutos.
