TALLARINES CON BERENJENAS
Ingredientes:

  • 200 g de tallarines
  • 2 berenjenas medianas
  • 350 g de tomates maduros
  • 1 diente de ajo
  • 100 g de queso parmesano
  • perejil o albahaca
  • aceite
  • sal
  • pimienta
    • Elaboración:

    Cortar las berenjenas en tiras.
    Freírlas en una sartén con aceite hasta que estén tiernas y reservar. Mientras se fríen, se puede espolvorear con un poco de sal.
    Escaldar los tomates, quitarles la piel y trocearlos.
    En una sartén (se puede utilizar la misma que con las berenjenas) sofreír ligeramente el ajo cortado en tres partes.
    Añadir los tomates, la albahaca, el perejil, sazonar y freír unos 10 minutos.
    Rallar el parmesano.
    Hervir los tallarines al dente, escurrirlos y colocarlos en una fuente.
    Incorporar las berenjenas.
    Cubrir con la salsa de tomate.
    Espolvorear con el queso rallado. Hornear a 180 grados 15 minutos.
    Servir espolvoreado con perejil.
