GALLETAS DE ZANAHORIA
Ingredientes:

  • 250 g de zanahoria
  • 100 g de azúcar
  • 100 g de mantequilla
  • 350-370 g de harina
  • 50 g nueces
  • 30 g de pasas
  • 1 cucharadita de la soda apagada (½ cuchara de postre de bicarbonato sódico y añadir gota a gota vinagre hasta que se haya disuelto completamente el bicarbonato. Aproximadamente ½ cuchara de postre de vinagre)

    Rallar la zanahoria.
    Desmenuzar las nueces con una batidora o picar con un cuchillo.
    Mezclar la mantequilla reblandecida (dejar fuera de la nevera unas horas antes de cocinar) con el azúcar.
    Añadir la zanahoria, mezclar.
    Añadir las nueces y las pasas. Mezclar.
    Añadir la soda apagada, la harina y amasar. La masa no se tiene que pegar a las manos y tampoco ser espesa. Si la masa sale espesa las galletas van a agrietarse.
    Formar pequeñas bolas de masa y achatarlas un poco. Tapar la bandeja del horno con papel o untar con mantequilla. Poner las figuras y hornear a 180 grados durante 35-40 minutos.
